Homemade Pan Mee

Craving for some homemade Pan Mee! When the family wants Pan Mee, just mention about it and MamaCook will make it. Since now I am living away from home I got to find my own way in satisfying my craving. Making this Pan Mee turns out pretty simple and easy. To my surprise it doesn’t require much of a skill. I did rang MamaCook to make sure I am on the right track and portion wise she just told me to eye ball it and I did. The measurement for the recipe below may or may not be accurate. My advice is to just let the inner Cook of you shine and do the job.

In this homemade Pan Mee recipe, the must have is ‘Sayur Manis’ it just isn’t the same without it (in my opinion). Sayur Manis or Sweet Leaf vegetable with the given scientific name of ‘Sauropus Androgynus’ it’s a pretty darn nice vegetable. It goes really well with Pan Mee. However, there aren’t many Pan Mee seller who actually put  this kind of vege in. I guess there are cheaper alternative. Fred not to those who doesn’t know what ‘Sayur Manis’ is, picture shown below is the vege with the stem still on it. In all senses, you can totally throw in any type of your favorite vegetables since it will only go to your own tummy anyway. In this recipe the mushroom topping should have sauteed with minced pork but since my sister doesn’t consume pork and she prefer it without meat hence I took the meat off the recipe. You can always tweak the recipe to your own preference by adding more toppings and ingredient to your Pan Mee. Its called the Homemade Pan Mee with a reason! Go have a little fun with the recipe.

Ingredient

Noodle dough

500g Wheat flour/ tepung gandum

1 bowl of water (300ml-350ml)

1 large egg

Method

1. Pour in the flour in a large mixing pot and slowly pour in the water by portion.

2. Mix the flour and the water until it is a little sticky and crack the egg and pour in 1 tbsp of oil

3. Continue to mix the ingredient by hand until it turns into a dough

4. Continue to knead the dough until it is no longer sticky

5. Add in water  if the dough is too dry or flour if the dough is too sticky to knead

6. Once you get the desired consistency (as shown), cover the dough with a damp cloth and leave it to rest

Ingredient

Soup

1 cup dried anchovies

1/2 cube of chicken stock

3cm ginger sliced

10 cups of water

Salt

White pepper

 

Topping

Mushroom

5 shiitake mushroom (stem removed) thinly sliced

2 cloves of garlic, minced

Salt

 

Fried Onion

7-8 shallots, thinly sliced

 

Fried Anchovies

1 cup of anchovies (head removed)

 

Method

 

1. Pour in the water in a large pot and let it boil

2. Put in the dried anchovies, sliced ginger and chicken stock cube

3. Bring it to boil, once it’s boiling turn to low heat and let it simmer for 10-15 minutes

4. While waiting for the soup to boil, fry the topping

5. Pour in 1 cups of oil in a pot and put in the onion and let it fry until it turns golden brown

6. Remove the onion and in the same pot fry the anchovies until it turns golden brown and crispy

7. Next, fry the garlic with 1 tbsp of oil and put in the shiitake mushroom

8. Sauteed it for 3-4 minutes or until it soften

 

Pan Mee

1. Once everything it’s prepared, take some of the soup into a different pot to cook the noodle

2. Put the soup on medium high heat

3. Take some of the dough and gently pull the dough to form a big piece and tear it off (as seen in picture) and drop it in the pot of water

4. Continue to tear the dough until desired amount of noodle. Don’t worry if it doesn’t look nice it supposed to be a homemade recipe and original Pan Mee is being hand torn.

5. Let it cook until it turns slightly white and add in a bunch of ‘Sayur Manis’ and let it boil

6. Cook for another 30 seconds and turn off the heat

7. Put in all the topping (sauteed mushroom, fried anchovies, fried onion) and serve with cut chilies and soy sauce.

You can squeeze in some lime on the cut chilies and soy sauce.
