Shrimp Aglio E Olio

Cuisine: Italian   |   Prep time: 30 minutes   |   Cook time: 20 minutes   |   Serve: 3 persons

Productive day on a relaxing Saturday. The day started with some light exercise. Since there weren’t any plans for the day, so I thought I could do some cooking. I couldn’t decide of what to cook for dinner even after googling it then I remembered, a dear friend who designed my logo likes Shrimp Aglio e Olio. Then thought why not I make some instead.

No fancy ingredient needed for this recipe, few simple ingredient and its good to go! It may be simple but its definitely hard to master. Simply because I’ve tried many version of Aglio e Olio but just couldn’t make it the chef way. I guess I have to keep trying then.

I actually forgot to capture the part where I put the spaghetti in once I reach this step. I am used to just cooking and preparing the dish and only capturing the end product. Will definitely take into account of what my friend had told me that I need to capture the process or what he called it a ‘creative process’. Visual plays an crucial part when it comes to cooking, there isn’t a way I could have learnt cooking from Youtuber or Google without going through step by step cooking process. Thanks to the internet everything seems easier and cooking seems achievable too.

350g of Spaghetti (any pasta of your choice)
300g of fresh Shrimp (peeled and deveined)
150ml of extra virgin olive oil
6 cloves of garlic (thinly slice)
1tbsp of red pepper flakes (amount depend on own preference)
1tbsp of fresh coriander (roughly chopped)
ground pepper

1. Boil the salted water and add in the spaghetti, cook it until it is al dente (cooked and but still firm to bite), roughly 7-8minutes then drain it.
2. While in the process of step one, put in olive oil and garlic together in a large pan over medium heat. The reason for this is to infuse the garlic in the olive oil so that it will be fragrant and tasty when it coats the spaghetti.
3. Once garlic is slightly heated add in the red pepper flakes. Lightly fried it and add in salt and ground pepper.
4. Add in the shrimp and cook until it turns colour.
5. Add in the drained spaghetti into the same pan and toss until the spaghetti is thoroughly coated with the garlic oil.
6. Add in chopped coriander and give it a final toss and remove the pan from the heat.
7. Garnish and serve.
